The Bear: Finishing Nat’s explanation of Michelin Stars
In episode 4 of season 3 of “The Bear” we’re given what feels like half of an interesting explanation on the Michelin stars. The holy grail of the fine dining industry that Carm is obsessed with.
We watch Richie finding Natalie in her office, where she is doing research on the Michelin stars. She begins talking, Richie says he doesn’t give a flying f*** on a forward rolling donut about the stars and they move on.
But you do, or you wouldn’t be here. Let’s recap what Natalie was saying…
Nat begins “Did you know that stars dictate whether any given restaurant is worth a walk, drive, or flight?” “Yeah, they’re based on taste, creativity. One star is excellent.” “Two stars is…better”
And that’s it.
But if you look at Michelin’s explanation on what is a Michelin Star, you get a little more.
We take into account five universal criteria: the quality of the ingredients, the harmony of flavours, the mastery of techniques, the personality of the chef as expressed through their cuisine and, just as importantly, consistency both across the entire menu and over time.
One MICHELIN Star is awarded to restaurants using top quality ingredients, where dishes with distinct flavours are prepared to a consistently high standard.
Two MICHELIN Stars are awarded when the personality and talent of the chef are evident in their expertly crafted dishes; their food is refined and inspired.
Three MICHELIN Stars is our highest award, given for the superlative cooking of chefs at the peak of their profession; their cooking is elevated to an art form and some of their dishes are destined to become classics.

If you remember “Ever” which is Chef Terry’s (Olivia Colman) restaurant from last year, you’ll recall her place is a three star restaurant.
And when you read this description, along with Carmy’s non negotiables, you get a better understanding of why “The Bear” is operating like the “The Bear” does.
Hope that helps!
